Borjomi is a spa town in a wooded gorge, and the park is worth the walk even if you do not drink the water — which is famously not to everyone's taste.
Vardzia is the reason to make the longer drive. Queen Tamar's monastery was cut into the rock in the twelfth century and once held hundreds of rooms across thirteen levels; an earthquake in 1283 sheared the outer wall away and exposed the whole thing in cross-section.
It is a long day — around eight hours of driving. Worth doing, but not to be combined with anything else.
